Planting Parsnip

Till the area to be planted about 12 to 16 inches deep to allow the roots to develop to full size. Sow seeds about 1/2 inch deep and 1/2 inch apart in rows 12 to 22 inches apart; cover seeds with vermiculite or sifted compost to ensure good germination. Keep soil moist as parsnips won't push through crusted soil.

Growing Parsnip

When plants are established, thin to 3 to 4 inches apart. Mulch to suppress weeds and retain moisture.

Harvesting and Storing Parsnip

The flavor is enhanced after the plants have gone through a few frosts; with a thin layer of straw for warmth, you can harvest parsnips all through the winter.

Parsnip Insect and Disease Information

Carrot weevil can be minimized by cleaning up garden debris in autumn. Celery blight can become a problem; keep parsnips well watered to avoid it.
