Yam

General Yam Info

There are about 200 varieties of yams. True yams are a tuber of a tropical vine and rarely found in U.S. markets; it's a popular vegetable in Latin American and Caribbean markets.

Short Term Yam Storage

Do not store raw yams in the refrigerator.

Keep unwashed yams in a cool, dry location away from light to prolong shelf life; these are a good item to store in your pantry. They will keep for about 2 weeks.

Cooked whole or pureed yams keep 1 week in the refrigerator.

Yam Long Term Storage

If you store yams a cooler location, about 55 degrees F, they will maintain their freshness for a month.

Cooked, mashed yams freeze well.

Yam Side Notes

Many people think a yam and a sweet potato are the same vegetable; technically they are different. Yams are a member of the yam family (closely related to lilies) and originate from West Africa and Asia. Yams are drier and starchier than sweet potatoes. Sweet potatoes are members of the morning glory family, and originate from South America; they are a moister and sweeter vegetable than the yam.
