General Leek Info

When purchasing, the smaller the leek, the more tender it will be; leeks over 1½ inches in diameter can be tough and less flavorful.

Short Term Leek Storage

Store leeks unwashed with the roots attached. Refrigerate leeks in loosely wrapped plastic so other foods don't pick up their aroma. Leeks can hold in the hydrator section of the refrigerator for 2 weeks without losing any quality. Too much dampness can cause leeks to turn brown and begin to rot.

Leek Long Term Storage

You can freeze cooked leeks to be used later for soups or casseroles; they remain good for up to 3 months.

Don't freeze or can raw leeks. Freezing raw leeks softens them; they lose all their texture and may pick up a bitter taste.

Leek Side Notes

The leek is a member of the onion family, but the flavor is much more refined, subtle, and sweet than the standard onion.
