General Brussels Sprout Info

Brussels sprouts continue to "ripen", picking up a strong flavor during storage, so it's best to use them as soon as possible after harvesting to guarantee a delicate flavor.

Short Term Brussels Sprout Storage

Unwashed brussels sprouts will keep 2 to 3 days in the refrigerator in a perforated plastic bag; however, their taste gets stronger. Use as close to picking as possible.

With cooked sprouts not only does their flavor get stronger, but they also soften and lose texture.

Brussels Sprout Long Term Storage

To freeze, blanch trimmed heads in boiling water (small heads for 3 minutes, medium for 4 minutes and large for 5 minutes). Chill in ice water for 6 to 8 minutes. Drain, pack into ziplock bags or freezer containers, label and date. Brussels sprouts keep frozen for up to 1 year at 0 degrees F.

Most common is the green Brussels sprout; a newer reddish-purple variety can sometimes be found at farmers' markets.
