General Broccoli Info
When selecting broccoli, look for thick heads of compact, tiny bud clusters that are evenly dark green (or with purplish tint) in color; it should have a fresh aroma and a firm but tender stalk.
Short Term Broccoli Storage
Keep unwashed from the garden or market, trimming only the large leaves. Store in a perforated plastic bag in the humid crisper section of the refrigerator, where it will keep 7 to 10 days.
Blanched broccoli may be refrigerated covered, but it quickly loses its texture; use as soon as possible.
Broccoli Long Term Storage
Wash, trim, peel, and cut lengthwise into ¾-inch thick pieces. Blanch for 3 minutes, and plunge into cold water for 3 minutes. Drain and pack into freezer bags. It will keep 8 to 12 months at 0 degrees F.

The more common varieties of broccoli are: Sprouting Broccoli (most common in U.S. stores), Purple Broccoli, Broccolini (cross between broccoli and kale), Broccoflower (cross between broccoli and cauliflower), Chinese Broccoli, Romanesco Broccoli, and Broccoli Sprouts.
